Colombia Borbon Wonder

Borbon Wonder was grown at La Piragüa in Huila, Colombia. Alexander Vargas purchased the farm with his wife after many years gaining coffee experience as a picker. They cultivate multiple varieties on the farm included this Striped Borbon, Gesha, Java, Caturra, and Pink Borbon. 

For Borbon Wonder, Striped Borbon cherries are picked and sorted multiple times to select the highest quality fruit. After this rigorous sorting, the cherries go through an anaerobic fermentation for 60 hours in sealed tanks. Anaerobic fermentation helps develop unique flavor and aroma found uniquely in these specially processed coffees. The coffee is finished by drying for a few weeks on raised beds and stabilized under tarps for a month.
