This coffee is one of our most nuanced and special arrivals in a long time, all thanks to the meticulous processing style by producer Wilton Benitez. After harvest and sorting by size and bean density, the coffee is sterilized by ozonated water and ultraviolet light and fermented in cherry for 48 hours. During this fermentation stage, yeast is added to the controlled environment. After this, the coffee is pulped and fermented again for 68 hours and juices are incorporated during the second fermentation phase. Finally, the coffee is washed and dried for 48 hours at 38 degrees C.
This all sounds like a lot of work, and it is! The result is a coffee with a flavor profile that is so unique we almost couldn’t quite put our finger on it! We taste peach, green apples, and sophisticated florals that remind us of high quality gesha coffees. This coffee is bright, exciting, and perfect for a developed palette for coffee.
While we don’t judge how you take your coffee, we highly recommend having this coffee black with nothing added so you can really taste the magic. Some coffees shine all on their own and this one absolutely does. Very limited quantities available!
