Colombia Borbon Marta Rubi

Prepare yourself for one of the best coffees of the year! This Red Borbon variety comes from the El Vergel family farm owned by producers Elias, Shady, and Marta Bayter, who planted 5,500 plants in 2016 near their washing station. The family also has a team of highly specialized and skilled coffee pickers, all women, who are responsible for the incredible quality of El Vergel coffees by picking 95% mature cherries at harvest.
The coffee is anaerobically fermented in stainless steel tanks for 60 hours then dried intermittently over 35 days in the sun, finished in a mechanical drier, then stored for 2 months in grain pro bags for maturation. The result is a coffee that is complex flavor like tropical fruits, pink candies, and a beautiful white wine acidity. While the processing sounds intimidating, the cup is delightful and easy to fall in love with. We find this coffee is best had as a V60 pourover and served black.
