Welcome to our third Tio Conejo offering in our Colombian Coffee Producers series, La Cuevita! This coffee comes from El Tablón in the Nariño department produced by Libardo Martinez. Anaerobic coffees are defined by removing oxygen in the fermentation stage, which results in very unique textures and fruit flavors characteristic of the processing technique. A cup of La Cuevita starts out tasting very similar to your typical Colombian washed coffee, some cherry sweetness, an almost herbaceous aroma, and then brightens up quickly with grape juice, an almost carbonic or sparkling effect crosses the palate.
