Colombia Cauca Manos Juntas Micromill
We’re super excited to bring another Colombian coffee from Cauca back for you guys! Something about this region of coffee we just can’t get enough of and we are totally in love with this coffee from the Manos Juntas Micromill. The micromill is operated and managed by Banexport in the Cauca region with the intention of simplifying tasks and responsibilities for producers of producing great coffees.
This coffee is placed into tanks and anaerobically fermented for 10 days with nitrogen to stimulate the yeast during fermentation. After fermentation the coffee is dried for 30-40 days in solar dryers.
Banexport puts in a lot of attention to detail in the processing of their coffees and making sure their producers are getting a great price for their coffees. They believe half of coffee quality comes from crop production by producers and half from post harvest processing. We simply couldn’t agree more! From our tasting, we consider this to be an outstanding coffee and we’re excited to share it with you! We taste a variety of tropical fruits including pineapple and lime, candy like sweetness, and a rich dark chocolate finish.
